About a year ago, during a routine grocery run for my then college aged student son, Phillip (a burgeoning food connoisseur himself), where he raved about this intriguingly named cheese. Trader Joe’s has a knack for catchy names, but Unexpected Cheddar? It piqued my interest immediately.  Why unexpected? Well, imagine if Parmesan and Cheddar had a delicious rendezvous and produced a cheese offspring. That’s Unexpected Cheddar for you. Now, as someone who’s particular about textures in food (bananas and avocados are a no-go due to their mushiness, and don’t get me started on watermelon) cheese has to strike the right balance. Just when I thought I knew all this cheese could offer, it reinvented itself in a spreadable form. This creamy, rich spread elevates any breakfast; it turned my usual morning bagel into a gourmet experience.
